Everything I make could be labeled “super easy” and this one is no exception! You just can’t beat three-ingredient recipes.
This isn’t the prettiest guacamole ever, but it’s pretty tasty! Most recipes I’ve looked up online are a bit daunting with a long list of items to dice (and I’m not a fan of red onions or cilantro), but I found this super simple recipe in Betty Crocker’s Guide to Cooking so I gave it a try. I had never had fresh guacamole before trying this recipe, but it’s amazing how easy it is… so I’ll probably be throwing a couple avocados in the grocery basket more regularly!
1 tablespoon lime juice (about half a small lime)
1/3 cup chunky salsa
Scoop out the avocados into a bowl, and mash with a fork.
Mix in the lime juice and salsa… and that’s it! The lime juice helps the avocado to keep from turning brown, although the addition of the salsa turns this into a pretty murky color… I was a bit skeptical at first, but ti’s actually really good!
I ate it with a bowl of chips for dinner one night, and ate up the rest the next night on top of beans and rice.
